I don’t think I’ve ever met anyone who didn’t love pancakes for breakfast.
If you’re anything like me, you’ve probably tried dozens of pancake mixes through the years, trying to find the one that would be your favorite. Even with all the mixes out there, there always seemed to be either something missing or more ingredients then you cared to consume.
And you probably didn’t want to eat them too often, because how unhealthy and fattening is it to smother your pancakes with butter and syrup. OK, I admit, they taste delicious, but really, wouldn’t you just love to eat them as often as you wanted without worrying about the unhealthy consequences.

Ingredients
1 cup almond milk (or plant based milk of your choice)
2 bananas
1 tsp cinnamon
1 tsp baking powder
1 tsp vanilla extract
2 cups rolled oats (gluten-free works great)
1/2-1 cup blueberries (optional)
1 tsp spirulina (optional-will turn your pancakes blue)

In your high speed blender, blend almond milk and bananas until smooth.
Modification Options: Substitute oat milk, rice milk, or coconut milk
Step 2
Add cinnamon, vanilla and baking powder, blend (add any additional powders at this time)*
Note: There are so many wonderful powders we can add just to change it up a bit or add beneficial supplements. Some of my plant-based favorites are
Modification Options: Blue spiruluna, maca powder, protein powder, peanut butter powder, collagen powder & alma berry powder.
Step 3
Slowly add oats & blend well.
Note: I love pancakes! So after trying many different recipes to find the perfect pancake with minimal ingredients and of course, oil-free and completely plant-based, I found the secret. Just by throwing a few ingredients into your blender, (i use a vitamix), you can have easy and quick blender pancakes. So clean and healthy, you can eat them everyday. I guarantee, you will never buy store boxed or bagged pancake mix again.

I have always found breakfast to be the most important meal of the day. You’ve been fasting all night, now it's time to wake up your metabolism, giving you the jumpstart you need and giving you the energy, hence motivation to get moving. Our muscles and brain definitely work best when fed a nutritious, satiating breakfast.
Research says, if you start with a healthy meal in the morning, you are less likely to nibble on unhealthy snacks throughout the morning.
